Ginny had a picture of Grasshopper Pie on her blog a few days ago that I knew my kids would love (the taste as well as the name). She posted the recipe today on her Talkin' about Thursdays and asked us to share a recipe as well. I bake a lot here, but don't usually make super decadent things. When I need to LOOK like I put work into it, I make the following recipe. It looks pretty, is easy to do, and I like it better than real trifle, as I never developed taste buds that care for the taste of alcohol.
(I have used my own home baked choc cake as well)
2 cans cherry pie filling
1 lg. container Cool Whip thawed
( I prefer real whipping cream, so that is what I use)
2 boxes instant chocolate pudding
(no, I don't make my own pudding- that would take too long!)
1 chocolate bar (for garnish)
( I don't know if I have ever done this- there is NO way I wouldn't eat the bar first. I think I have used choc chips before though)
Bake your cake according to the directions;
made, preferable in 2 8-in. cake pans.
Mix pudding as instructed on box and set aside.
After cake has cooled, take your trifle bowl
and put a bit of pudding in the bottom. Next add a layer of cake pieces.
Next, spread on half the remaining pudding. Next, pour on a can of pie filling, then half the Cool Whip. Repeat layers, ending with Cool Whip.
Save a few cherries to put on the top and then shave a chocolate bar over the top.
Make sure you make it in a clear bowl to get the full visual effect the layers of chocolate, whipping cream, cherries, etc.

I love doing things like this when we attend group functions.
One that has gone over very well....
Pound cake,white choc pudding, whipped topping and blueberries.
If fresh are in season...then I make my own pie filling.
