Salsified!

I like my meat. Actually, chicken done up nicely with veggies and a salad is probably my favorite type of dinner, but I live in a house with man that comes home hungry. I used to make a meatloaf that was super good, but also not the healthiest one around- cheese, bread crumbs, ketchup, etc. Last summer my thrifty daughter hit a garage sale with a friend and came home with free gifts for everyone. Mine was a great cookbook from Canadian Living. I love to find a cookbook with regular, yummy, tummy warming meals, and this is one of the best ones I have in my collection. Last night I made Salsa Meatloaf- it is better for the old heart and also really yummy! Try it. I used all the of the eggs instead of just egg whites as I know the egg yolk would sit in a container in my fridge until it hardened and then I would find it and feel guilty over waste. I also threw in left over spaghetti squash instead of zucchini. The salsa on top gave zip- hubby liked it, while a couple of the kids found it too hot. That could be remedied by using one that is less spicy. If you try it, I hope you enjoy it as much as I did- I had it for dinner last night, as well as breakfast and lunch today!

BTW- I don't speak Spanish, (or whatever language the song is in), so don't freak out if you do, and the lyrics are super racy or something!
