
Here is a family favorite that I haven't made in a long time. I will be sending this in my hubby's lunch tomorrow- it makes a big pan which I cut into little slices as it is rich. ( I just hope I can stay away from them!) I found this recipe in a book called Enjoy! More Recipes From the Best Of Bridge. These cookbooks are a Canadian favorite- hard to find a bad recipe in them. I would recommend Best of the Best, vol 1, as it compiles most of the favorite recipes out of the series- though this particular recipe is not in that book.
Mrs. Larson's Bars
Crust
1 cup butter
2 cups brown sugar
2 eggs, beaten
2 tsp vanilla
2 1/2 cups flour
1 tsp soda
1 tsp salt
3 cups oatmeal
Filling
1 12 oz pkg choc chips
1 14 oz can eagle brand milk ( sweetened condensed milk)
2 Tbsps butter
1/2 tsp salt
1/2 tsp vanilla
Crust: Cream butter and sugar. Add eggs and vanilla, mix well. Combine flour, salt and soda and add to batter. Mix. Add oatmeal and mix into a crumbly texture. reserve 1/4 of this mixture for topping. Pat remainder into bottom of an 18" x 15" jelly roll pan or two 9" x 13" pans. (Bar should be 3/4" thick when cooked.)
Filling:combine ingredients in tip of double broiler, heat, and stir until melted. Spread filling in thin layer over crust and sprinkle (it is a bit gooey to "sprinkle, so just drop little pieces of it all over) top with the reserved oatmeal mixture. Bake at 350 degrees for approx 20 minutes or until golden brown.
These are a treat in our home, but at the same time, I can tell myself that they are slightly healthy as there is oatmeal in it! Don't let the double boiler scare you away. I just plop a glass dish on top of a pot of water.

my girlfriend makes these with coconut too and forget the little slices.. i can sit down and eat the whole pan!
Yeah, I'm with fatty. I could (and most likely would) sit down and est the whole pan!
Best of Bridge cookbooks are good aren't they? They've got an awesome broccoli casserole that I always make at Christmas. Rave reviews every year!

Okay. Judging by the reviews I was smart in just skipping past the food. I bet just looking at it would cause me to gain weight. *Sigh* Man I want chocolate, though.
